What is "Black Currant" "Black Currant" is a deciduous shrub of Europe and Asia that belongs to the saxifragaceous ribes species. The small deep-purple seeds that have a sour flavor are rich in many ingredients that are known to be used in health foods such as polyphenol, gla and Omega-3 of essential fatty acids and vitamins. It is also rich in minerals that the people of today tend to lack in their ordinal diet, such as potassium and calcium, and provides a good balance of various nutrients. The deep-purple pigment in the fruit reveals its richer content of cassis anthocyanin, which is a cassis polyphenol (not found in blueberries) . There are various types of polyphenol. The more well-known ones are "catechin", which is in tea, and "isoflavone", which is in soy beans and these are recently gaining popularity in Japan. Cassis polyphenol helps remove active oxygen, which is a cause of oxidation in the body. Furthermore, the cassis anthocyanin in cassis polyphenol stimulates the generation of rhodopsin, which is the pigment composition in the eyes. Comparing black currant to the blueberry as can be seen in the darkness of red and purple in berry fruits, the darker the color is the more contents of anthocyanin. It has been reported that there are more nutrients such as cassis anthocyanin, potassium, calcium, zinc, and magnesium than in blueberries. Anthocyanin is a part of the natural pigment that is called flavonoid group, and there are four types of anthocyanins in the polyphenol of black currant seeds.
