It is obtained by extracting the ovaries from female tuna or mullet immediately after their capture. Afterwards, they are salted and pressed on wooden planks and then dried and vacuum packed.The bottarga is packed:- in the jar, ready for use- whole, vacuum packed, to slice or... To bite.Tuna and mullet are surface fish common to all seas of the world.
