Italian company, founded in 1986 in a small workshop, manufactures "bottarga" the caviar of the Mediterranean sea, which is nothing but compressed and salted tuna or mullet ovaries. It is obtained by extracting the ovaries from female tuna or mullet immediately after their capture. Afterwards, they are salted and pressed on wooden planks and then dried and vacuum packed.The bottarga is packed:- in the jar, ready for use- whole, vacuum packed, to slice or... To bite.Tuna and mullet are surface fish common to all seas of the world. The ones living in the Mediterranean sea have very tasty meat, different from similar fish, because the Mediterranean is nothing but a big lagoon with a special pasture that determines the good quality of the meat and consequently of the eggs.Strong in this conviction, the owner was the first in Sardinia to produce and sell bottarga, further improving its fame outside the island.The products are sold only after very accurate quality control tests performed in cooperation of the laboratory of the University of Cagliari.Thanks to the use of new working methods, the company has improved the quality and taste of its products, through an absolutely new drying process, that makes it compact in the centre as on the outside, this uniformity tasty.The company`s customers categories are:- fish markets- Italian food importers- Gift shops- restaurants/bars.The company wishes to get in touch with importers, wholesalers and trading companies.Target countries: Japan, China and Taiwan
